Gravy


Ingredients

  • 1-2 small thinly sliced/diced shallot
  • half minced garlic bulb
  • 16 oz mushrooms sliced
  • 1 cup veggie broth
  • 3-5 sprigs fresh thyme (or dried Italian herb)
  • 2 tbsp olive oil
  • 4 tbsp butter
  • 5 tbsp flour
  • Use a large pan that can hold 1 qt of liquid

Cooking Instructions

  1. Heat 2 tablespoons of olive oil over medium heat until it shimmers
  2. Add shallots and cook for about 5 min; add a little salt and pepper
  3. Add garlic and cook until they start to turn brown; add a little salt and pepper
  4. Add mushrooms; some salt and pepper and fresh thyme, cook for about 10-15 minutes; they should release their liquid and look like well-cooked mushrooms
  5. Add butter, flour, and add a little oil if the flour is too dry (should look like a paste)
  6. Cook for 5 min stirring constantly
  7. Slowly add 1 cup of veggie stock (slow pour or little at a time) and stir (this will prevent lumps)
  8. Add the rest of the veggie stock and stir
  9. Simmer for about 15-20 min until it reduces and thickens to coat the back of a spoon
  10. It should thicken more when it cools

Mashed Potato


Ingredients

  • 2 pounds of red potatoes
  • 2 tablespoons of butter
  • 1 cup of milk

Cooking Instructions

  1. In a small saucepan, heat butter and milk over low heat until butter is melted.
  2. Fill a large pot of water with potatoes and bring to a boil
  3. Simmer for 20 minutes or until the potatoes are cooked (fork stab test)
  4. Using a potato masher or electric beater, slowly blend milk mixture into potatoes until smooth and creamy.
  5. Season with salt and pepper to taste.
