Compiled Ingredients
- 1 lb baby potatoes
- 1 head cauliflower
- 1 lb Garbanzo Beans (chick peas)
- Spinach
- Tortilla
- Green Chutney (Sample Chutney recipe)
- Red onion
- White vinegar, Red wine vinegar, OR Apple cider vinegar
- Garlic bulb
- Bay leaves (couple leaves)
- Oregano (dried OR fresh)
- Olive Oil
- Sugar
- Salt
- Yellow curry powder
- Granulated powder, Onion OR Garlic
- Coriander
- Cumin
- Chili flakes
- Fennel seeds
- Peppercorns, Coriander, Star anise, OR cumin, seeds
Curry Mashed Potatoes (The Spread)
Ingredients
- 1 lb baby potatoes, quartered
- 1 TBSP (olive oil, ghee, OR coconut oil)
- ¾ TSP salt
- 3 TSP Yellow curry powder
- 1 TSP granulated onion OR garlic powder
Cooking Instructions
- Cut and placed in pot submerged in water
- Bring to a boil and then simmer for 20 minutes (or until tender)
- Drain the cooked water but leave ½ cup of water in there
- Smash the potato with water inside the pot
- Add the remaining ingredients and stir
Roasted Cauliflower & Chickpea (Filling)
Ingredients
- 1 head cauliflower
- 1 lb chick peas
- 2 TSP olive oil
- 1 ½ TSP salt
- 1 TBSP coriander
- 1 TBSP cumin
- 1 TSP fennel seeds
- Pinch of chili flakes
Cooking Instructions
- Chop the cauliflower into small florets into a bowl
- Add chick peas
- Add the remaining ingredients and stir
- Spread onto pan and bake 400 degrees for 20 minutes
- Toss halfway through
Pickled Red Onion
Ingredients
- ½ red onion (OR whole if preferred)
- ½ cup of (white vinegar, red wine vinegar, OR apple cider vinegar)
- ½ cup water
- ¾ TSP salt
- 1 ½ TSP sugar
- 2 TSP of (peppercorns, coriander, star anise, OR cumin)
- 2 garlic cloves, halved
- couple bay leaves
- 1 TSP dried/fresh oregano
Cooking Instructions
- Thinly slice red onions and add to pan
- Add the remaining ingredients and stir
- Boil and then bring to a simmer/stir for 1 minute
- Let it cool down
- Pour content into a jar and refrigerate it (lasts 2-3 weeks)

Prepping Instructions
- Warm some tortillas
- Put the spread of mashed potatoes onto a tortilla
- Add spinachh
- Add some fillings of cauliflower/chick peas
- Add chutney
- Add pickles
